Recipe of the Month - Apple Cupcake with Caramel sauce (makes 24 cupcakes)
These cupcakes will surprise you as they are so delicious hot or cold with cream or icecream
4 tablespoons butter melted
2 eggs
1 cup selfraising flour
3/4 cup sugar
1/3 cup milk
1 tin cooking apples
Mix all the ingredients together, except the apples. Once thoroughly mixed, pour equally into the cupcakes. Divide the apples slices between the cupcakes and push into the mixture.
Bake @ 160 degrees for 20 minutes or until a knife comes out clear. While the cupcakes are cooking, make the caramel. Pour half tin of ideal milk (evaporated milk) into a saucepan and add 1/2 cup sugar. Cook until the sugar has melted. Once the cupcakes are cooked, pour a little of the caramel over each cupcake. Serve with fresh cream once cooled.
